Whew—a necessity of N’Awlins and the South! Red Beans and Rice is an emblematic dish of Louisiana Creole traditionally made on Mondays.  (“Why?”, you ask. Because the left over bones from Sundays meal are used in the stock. Kinda neat, huh?). No matter how Red Beans and Rice is cooked, it is always Mardi Gras Tradition.
